Mary's Pound Cake Recipe

Ingredients for Mary's Pound Cake:

1 cup butter, softened
1/2 cup shortening
3 cups sugar
1/2 teaspoon salt
5 eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1 cup milk
2 tablespoons lemon extract

* Beat butter and shortening in a large bowl at medium speed of an electric mixer; gradually add sugar and salt, beating well. Add eggs, one at a time, beating well after each addition.

* Sift together flour and baking powder. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix just until blended after each addition. Stir in lemon extract.

* Pour batter into a greased and floured 10 - inch tube pan. Bake at 325 degrees for 1 1/2 hours. Cool in pan on wire rack 10 -15 minutes; remove from pan and let cool completely on wire rack. Drizzle glaze over, if desired.


Ingredients for Mary's Glaze:

2 tablespoons butter
2 tablespoons shortening
2 tablespoons lemon juice
1 tablespoon milk
confectioner's sugar
* To make the glaze, combine all ingredients using enough confectioner's sugar to make desired consistency. Stir well.
